Tipical Italian dish: Spaghetti alla amatriciana

INGREDIENTS:
-          pasta 400g (bucatini or spaghetti);
-          pork cheek 100g;
-          pecorino cheese 75 g;
-          tomatoes 350 g;
-          a glass of white wine;
-          extra virgin olive oil;
-          salt, pepper and chilli;

HOW TO MAKE IT:
Prepare the pork cheek: cut it like cubes and put it into a pan to brown and then add one or two teaspoons of extra virgin olive oil.
When the pork cheek is ready, add the white wine and, when the white wine is evaporated, take it and put it in a dish.
In the pan where is the oil of pork cheek’s cooking add tomatoes, salt, pepper and chilli and cook them.
At the same time, boil the water to cook the pasta.
Pour the pasta into the pan where is tomatoes, add pork cheek and a few teaspoons of cooking water.
Cook them for about 2 minutes.
Serve this pasta with grated pecorino cheese and a bit of pepper.

A LITTLE ADVICE FOR YOU
There are some variations that you can try to do. It is spread to add chopped onion to the mixture of pork cheek, that you can replace with bacon.
